Why I Chose a Personal Culinary Journey Over a Crowded University Classroom

Choosing My Culinary Path: Why Personal Support Matters More Than a Packed University Classroom

If I sit back now and think about the time I had to make one of the biggest decisions of my life, I often wonder… would I have done anything differently?

As we grow older, we all look back. Sure, we remember the good decisions, the ones that shaped us and opened doors. But if we are honest, the decisions that stay with us the longest are the ones we question.

“What if I had taken that path?”

“How different would my life look now?”

“Did I miss my moment because I did not choose boldly enough?”

There are so many ways to ask these questions, and the truth is that we will never be completely satisfied with every choice we make.

But choosing how you begin your dream does not have to be one of those regrets.

Whether you have just finished school or you are in your mid-forties finally giving yourself permission to chase what you have always wanted, it is never too early and never too late to start in a way that sets you up for success.

And yes, there is a right way. Not a universal right way, but a right way for you.

Today, we are taking a look at why the decision you make now can shape your next ten years. It can open doors or close them. It can empower you or overwhelm you. It all depends on the path you choose and the reason you choose it.

So let’s take a deep dive into one of the biggest decisions you will make as an aspiring chef.

University versus International Culinary Studio.

University

Do not get me wrong. University definitely has its pros. Some of the standout ones include:

University Pros

  • Social life and meeting new people
  • Working together in groups
  • Access to large kitchens and equipment
  • Experiencing a traditional student lifestyle

But there is another side. And if you want personal attention, flexibility, or a more emotionally supportive learning experience, the cons can feel heavy.

University Cons

  • Sitting in classes with hundreds or sometimes thousands of students
  • Little to no one-on-one time with lecturers
  • Strict schedules that do not fit around your life
  • Very high fees without personalised support
  • Limited communication outside class time
  • High-pressure learning environments
  • Anxiety from performing in front of large groups
  • Long commutes and extra transport costs
  • Feeling like just another student instead of an individual with a dream
  • Needing to shape your life around the university instead of the university shaping around your life

The pros are good, but for many people today, the cons outweigh them.

Our world has changed.

Technology has changed the way we learn and the way we build our futures. So why would you not use that to your advantage?

This is where International Culinary Studio steps in.

ICS is modern and innovative but still warm, personal, and genuinely connected. You do not feel like a number. Many students say it feels like being at an in-person school, just without the pressure and the chaos.

So why ICS?

Just as in university, let us look at both sides honestly.

ICS Pros

  • Personalised support from real chefs who remember your name
  • Individual guidance whenever you need it
  • Study in your own kitchen, on your own terms
  • Build confidence without crowds or judgment
  • Set your own schedule around work, family, and life
  • No daily commuting or extra travel costs
  • You can work and earn while you study
  • Supportive and genuine feedback from chef tutors
  • You are your only competition, and you set the pace
  • Flexible payment options
  • Phone calls for support whenever you need them
  • Learning in the environment you will actually cook in
  • A calmer and more grounded approach to becoming a chef

Now for the cons.

ICS Cons

  • Missing the party life of a university campus
  • Less face-to-face socialising
  • You need to be self-motivated and take responsibility for your progress

But if you look closely, these are not true cons. They simply come down to discipline and knowing what you want out of your future. You can still socialise on weekends. You can still meet people. You can still enjoy life. The difference is that you can do it without sacrificing your dream or your mental well-being.

If your dream is to become a chef for real, not just imagine it, then choosing a study path that puts you first can change everything.

Why I Would Choose International Culinary Studio

When I look at both sides honestly, the choice becomes clear. Not because one is good and the other is bad, but because one aligns better with the kind of life I want to build.

If I picture myself at a university, surrounded by hundreds of students, fighting for attention, working around set class times, trying to keep up with the pace, juggling travel, fees, stress and performance pressure, I can already feel the weight of it. I can see myself slowly slipping into that feeling of being overwhelmed, of losing my spark, of trying so hard to be seen in a sea of faces.

But when I picture myself studying with International Culinary Studio, the image feels completely different.

I imagine myself in my own kitchen.

A space that is familiar.

A space where I do not have to pretend to be confident.

A space where I feel safe enough to learn, fail, try again and grow.

I imagine having a real chef on the other side who knows my name and my goals. A chef who is not rushing through a room of one hundred students but who is actually watching my progress and giving me feedback that feels like it was written for me.

I imagine learning at a pace that matches my life, not one that controls it.

Finishing modules without having to take time off work.

Practising a dish without an audience staring at me.

Sending a photo or video and receiving support that makes me feel encouraged, not judged.

Most of all, I imagine the confidence that comes from knowing I am not alone. That feeling of having someone in your corner who genuinely wants you to succeed. ICS feels like a team that believes in you long before you know how to believe in yourself.

This is the part that matters most to me.

Becoming a chef is not just about technique. Anyone can learn to chop an onion or make a roux. Becoming a chef is about passion, patience, courage and connection. It is about finding a learning environment that allows you to grow into the version of yourself you have always hoped you could become.

For me, that environment is ICS.

The warmth, the support, the flexibility, the personalised feedback, the genuine care, the real connection and the feeling that you are not just another student. You are an individual with a dream, and everyone there is invested in helping that dream become real.

When I think about the kind of future I want to build, the decision becomes simple.

I choose the path that lets me be myself.

I choose the path that gives me freedom.

I choose the path that supports me without suffocating me.

I choose the path that makes my dream feel possible.

I choose International Culinary Studio.
