Newsletter September 2025

Sep 26, 2025 | Newsletter

This year we proudly celebrate ten years of supporting students around the world. From our early beginnings as a pioneer in online culinary education to becoming a trusted provider of accredited qualifications, the journey has been incredible. Thousands of students have graduated with us and gone on to work in professional kitchens, hotels, and their own businesses. We are grateful to every student, instructor, and partner who has helped shape ICS into the global school it is today

Chef Andy Joins the NZ Chefs Board

We are delighted to share that Chef Andy has been elected onto the board of NZ Chefs, the national body representing culinary professionals across New Zealand. This achievement reflects his expertise and passion for the industry. For our students, it means learning from instructors who are not only experienced but also directly involved in shaping the future of the profession.

Thank You for Joining Info Chef

We would like to extend a big thank you to everyone who attended our recent Info Chef event. The turnout was fantastic, and it was inspiring to connect with so many passionate chefs, students, and industry leaders. The discussions, insights, and feedback shared during the event were incredibly valuable and will help us continue to align our programmes with the needs of the global culinary industry. Your support made the event a true success, and we look forward to hosting more opportunities like this in the future.

Meet Chop Chop – Our AI Chatbot

Studying online should always feel supported. That is why we have launched Chop Chop, our new AI-powered chatbot. Available on the ICS website, Chop Chop can help answer questions about courses, enrolment, and student support at any time of the day.

At this time, Chop Chop is still in their learning stage and we are constantly improving them both intellectually and with our students in mind. Due to this we challenge you to go on our website and converse with Chop Chop. In return, everyone who talks to Chop Chop will be entered into a draw where the winner will get access to our “AI Bootcamp for Aspiring Chefs” short course, absolutely free. No strings attached, just a simple conversation with our newest friend!

Industry Insight: Plant-Based Pastry

One of the fastest-growing trends worldwide is plant-based desserts. Pastry chefs are now experimenting with aquafaba meringues, dairy-free custards, and plant-based ganache to meet growing demand. At ICS, we train students to adapt to these changes, ensuring their skills remain current in a fast-moving global industry.

Quick Chef Tip

To keep herbs fresh and flavourful, use a sharp knife and a light rocking motion when chopping. This prevents bruising, keeps colours vibrant, and ensures clean presentation. Professional results often come from paying attention to the smallest details.
