Overview

The New Zealand Diploma in Cookery Level 5 – Patisserie, is for students who wish to develop their existing skills and knowledge in advanced culinary practice with the aim of advancing the learner’s skills in culinary management.
There will be a particular focus on Patisserie, learning specific techniques to produce a range of cake and pastries and bakery products.

This programme aims to develop the learner’s abilities in researching, planning, developing, implementing, and analysing of food products, recipes, and menus which ensure advanced practice in food preparation, cooking and presentation. Developing these skills is essential to the learner for progressing into supervisory roles within the hospitality and catering industry.

Your studies will be completed via our Learner Management System. Once registered, your student experience is accessible on any PC,most portable or mobile smart devices–meaning you can literally study anywhere, anytime to fit in to your lifestyle!
Our chef instructors are there to guide you throughout your programme, keeping you motivated until successful course completion

Duration

This is a full-time online programme of study (36-week duration which includes a 2-week holiday). It is self-paced allowing work/study flexibility which enables you to earn while you learn. The course includes a minimum of 120 industry hours and a final theory and practical exam.

In order to successfully complete a Professional Qualification, you will need to:

• Once we have received your enrolment and associated documents, you will be required for an online face to face interview before you are offered a place with the next course intake.
• Be 18 years of age, or older
• Have successfully completed 10 years of schooling
• Be a New Zealand Citizen or Resident for the NZQA Programmes Level 4 and 5
• Must have completed the New Zealand Certificate in Cookery Level 4 or equivalent
• You must be working in the culinary industry and be able to do a minimum of 120 hours working in a commercial kitchen in a supervisory position.
• Be able to read and communicate in English . You may use Google translate to change your course material into 104 different languages, however your assignments and final exams will need to be submitted in English
• Have access to the internet, e-mail (with a valid e-mail address), a scanner, a printer and a digital photographic device
• Have access to a reasonably well equipped kitchen, Technical Requirements
• Be computer literate with the ability to upload and download documents and photographs / video clips, Kitchen Equipment
• Be able to travel to your closest examination centre to write your final exam/s.

  • You can work through your material to fit around your schedule and be flexible with your study times
  • The New Zealand Diploma in Cookery Level 5 with strands in Cookery or Patisserie is a full-time programme of study of 34 weeks duration, plus a 2-week holiday
  • This programme has a minimum average of 120 hours for industry practical. Please be aware a Covid vaccine pass may be required to work in a commercial kitchen.
  • Course material is completed online via our Learner Management System, Canvas
  • Our Learner Management System can be accessed via multiple devices : desktop, tablet & mobile
  • Our highly-experienced Chef Instructors will be on hand to guide you through to a successful course completion

  • Costs to purchase any technology and/or kitchen equipment that you may not have, but need to use in the programme (See included lists of requirements)*
  • Cost of your internet access
  • Any printing you choose to do from the study guides
  • Access to a well equipped home/ industry kitchen for practicals.
  • Costs of travel for work industry experience
  • Cost of flights / accommodation to attend exams. These are held in either Auckland or Christchurch. Flights can range from $60 – $1000 depending on location, accommodation allow between $30- $400
  • Unscheduled exam costs – If we are setting a special exam just for you it will be held in Levin and there will be an additional cost of $1600
