Overview
A blended learning model that combines personal one on one teaching by a fully accredited Chef Instructor and online education which enables students to learn in-depth culinary techniques. The course is comprehensive and will teach our students all there is to know about preparing, cooking and finishing an extensive range of foods and also covers important topics such as food safety, nutrition, special diets, catering, food cost operations and menu planning.

New Zealand Certificate in Cookery Level 4
The NZ Certificate in Cookery Level 4 is for students who wish to progress from basic to complex food preparation skills, techniques and knowledge. This programme will enable students to learn in-depth culinary techniques in a vast array of hot and cold food preparation methods, including meat, fish, vegetables, grains, hot and cold desserts, and pastry dishes.
Along with cooking the student will learn food safety, nutrition, catering, kitchen procedures, food costing and menu planning. The course will prepare them for working as part of a team across all areas of a commercial kitchen.
In this programme you will learn the skills you need to gain confidence and knowledge in:

This accredited NZQA qualification will give you the skills to be employed in a commercial kitchen, have the theory, practical skills and confidence to open your own culinary business or continue onto further education by studying the NZ Diploma in Cookery Level 5.
Duration
This is a full-time online programme of study (36-week duration which includes a 2-week holiday). It is self-paced allowing work/study flexibility which enables you to earn while you learn. The course includes 120 industry hours and a final theory and practical exam.
- Once we have received your enrolment and associated documents, you will be required for an online face to face interview before you are offered a place with the next course intake.
- Be 16 years of age, or older
- Have successfully completed 10 years of schooling
- Be a New Zealand Citizen or Resident for the NZQA Programmes Level 4 and 5
- Be working in, or be able to work part time, for a minimum 120 hours in commercial kitchen.
- Be able to read and communicate in English . You may use Google translate to change your course material into 104 different languages, however your assignments and final exams will need to be submitted in English
- Have access to the internet, e-mail (with a valid e-mail address), a scanner, a printer and a digital photographic device
- Have access to a reasonably well equipped kitchen, Kitchen Equipment
- Be computer literate with the ability to upload and download documents and photographs / video clips
- Be able to travel to your closest examination centre to write your final exam/s
- Our study material can be accessed via laptop. A mobile or iPad may be used for certain aspects. Technical Requirements
- This is a full-time online programme of study (36-week duration which includes a 2-week holiday). You are required to commit to 35 notional hours of study per week, completing one module every two weeks.
- You can work through your material to fit around your schedule and be flexible with your study times
- This programme has a minimum average of 120 hours for industry practical.
- Course material is completed online via our Learner Management System, Canvas
- Our highly-experienced Chef Instructors will be on hand to guide you through to a successful course completion
- All assignments are assessed by our Chef Instructors

The New Zealand Certificate in Cookery Level 4 is a full-time programme of study of 34-weeks duration, plus a 2-week holiday. It is a 120 NZQF credit programme. The programme includes 15 modules. Students who successfully complete this programme will then have the option to continue onto the New Zealand Diploma in Cookery Level 5 . If you feel that you have gained sufficient experience through time worked in the industry or have a relevant prior qualification, you might be eligible for Recognition of Prior Learning (RPL).
