Course Details

The aim of the programme is to advance the learner’s skills in culinary practice.  In particular, this programme aims to develop the learner’s abilities in researching, planning, developing, implementing, and analysing of food products, recipes, and menus which ensure advanced practice in food preparation, cooking and presentation. Developing these skills is essential to the learner for progressing into supervisory roles within the hospitality and catering industry.

Upon completing this programme, graduates will be able to produce advanced dishes in a professional kitchen as a senior Chef.  In addition, graduates may pursue higher level employment opportunities in food production operations leading to senior or supervisory roles.  This programme allows graduates to obtain management skills in a commercial kitchen.  On completion of this programme, graduates can undertake degree study in culinary arts, or hospitality management.

There are two strands to the programme.  One is titled: Management and the other is an advanced Cookery Strand.

Course Duration

  • This is a self-paced home study course that can be completed in a time frame that suits you.
  • You can work through the material as fast as you like, but a maximum of 10 months is given to complete this programme.
  • This programme has an average expected duration of 1200 hours/34 weeks
  • This programme has a minimum average of 150 hours for industry practical
  • Course material is completed online via our Learner Management System, Canvas.
  • Our Learner Management System can be accessed via multiple devices : desktop, tablet & mobile

On completion of this programme, you could gain employment as a Chef de Partie or Sous Chef and be eligible to enrol in the City and Guilds Diploma in Culinary Arts or City and Guilds Diploma in Baking and Patisserie.

The New Zealand Diploma in Cookery (Advanced) Level 5 is a full time, 34 week, 120 NZQF credit programme. The programme includes 8 courses, all of which are compulsory with a maximum of 18 months to complete. Students who successfully compete this programme will then have the option to continue onto If you feel that you have gained sufficient experience through time worked in the industry or have a relevant prior qualification, you might be eligible for Credit Recognition and Transfer (CRT)  or an Assessment of Prior Learning (RPL). What are the Minimum Enrolment Requirements?
  • Domestic students must be 17 years or older
  • International students must be 18 years or older
  • If English is not your first language, you will be required to provide evidence of your English Language skills. This is an IELTS result of a General or Academic score of 5.5.  For more information please visit ielts.org
