The Micro Credential ‘Principles of Food Safety’ is one module of the Level 4 Programme of Study and will lead the achievement of 5 credits. This New Zealand micro credential is available to everyone worldwide.
The aim of this Food Safety in Catering Micro Credential programme is to provide students with an understanding of Food Safety legislation, policy and procedure and how to implement food safety practices in a professional commercial kitchen environment.
This course provides students with a range of food safety skills directly relevant to the hospitality and catering industry.
Students will study the course online, in their own home or work environment and in their own time.
The course will be offered to Domestic and International Students.
The students must have English language competence to undertake this programme, which is taught and assessed in English. Applicants for whom English is a second language require IELTS (Academic) level 5.5 with no band lower than 5.0.
Students must have the required technology to study online, take videos and photographs of work that they have completed. The student will also be required to have their own food thermometer to test the temperature of food.
There are two final assessments that the student will complete, the one, a theory assessment that is submitted online and assessor marked and the other an online, system marked, assessment.

Course Details
There are 5 topics in the micro credential course. This micro credential is one module of course 1 of the New Zealand Certificate in Cookery (Level 4) for which International Culinary Studio has programme approval. The Principles of Food Safety Micro Credential is divided into 5 topics:
1. Introduction to Food Safety in Catering
2. Workplace hygiene
3. Food safety in receiving and food storage
4. Food hygiene
5. Implementing HACCP
Outcomes:
This micro credential allows domestic and offshore graduates to:
- Apply, monitor, and maintain food safety practices.
- Monitor and maintain clean food production areas and equipment.
- This is equivalent to 5 credits.
Course Duration
Total length: 5 weeks.
Total learning hours: 50 notional hours
Online Studies
The studies you will complete from your own home, via our Learner Management System. Our Key Benefits will ensure you stay motivated whilst studying with International Culinary Studio. Once registered, your Student Experience will be accessible and your learning material available on any pc, portable or mobile smart device (Technology Programme Requirements). Students must have the required technology to study online, take videos and photographs of work that they have completed. Our Chef Instructors will be available and will guide you through your programme to successful course completion. All assignments will be assessed by our qualified Assessors. What are the Minimum Enrolment Requirements?
- You must be 16 years or older
- Must have the ability to read, write and speak English (The students must have English language competence to undertake this programme, which is taught and assessed in English. Applicants for whom English is a second language require IELTS (Academic) level 5.5 with no band lower than 5.0)
