Introducing Chef Danni
Sending a big welcome to Danniélla Loock our new Chef Instructor, we hope you love working with the International Culinary Studio team and our students!
Danni comes to us with a City & Guilds Advanced Diploma in Culinary Arts and is a professional cooking assessor. Danni has most recently been working as an executive chef for a game reserve and prior to this has spent her career as a chef or chef lecturer, so has an extensive knowledge to share with our students.
Here’s a short Q&A to get you all acquainted!
Where is your favourite place to go for dinner and what would you order?
I live in Cape Town, South Africa, which many would regard as the culinary capital of South Africa perhaps even Africa. As this is the case Cape Town is a melting pot for many different cuisines, cultures and religions. My favourite dining experience is at The Mount Nelson Hotel, the chefs table offered by Chef Rudi Liebenberg and his team.
What is your least favourite food to cook with?
The food type that proves to be a challenge for me would have to be pastry production. Warm hands and butter do not make for a great first attempt. I find myself plunging my hands into ice water or working in walk-in freezers far too often.
What is your signature dish?
I have been asked to prepare my Baked Milk Tart Cheese Cake with Cinnamon Syrup for so many special occasions that it has become my signature dish over the years.
What is your go to takeaway?
The best take away meal for me would definitely be the loaded fries from Raptor Room. Smoky and saucy Pulled pork, fried jalapenos, fresh coriander, select cheeses all lavished on golden handcut potato fries.
What / Who inspired you to start cooking?
When I was a child I loved preparing food, however the person who helped me realise that I was meant to be chef, was my chef lecturer. I owe him all I am today, the late Chef Daniel Williams.
What is one tip you could give to those beginning their culinary career?
Have fun and try your best. Working in food preparation can be testing, however rest assured, every successful chef started right where you are now. So do not give up.

“I had never been much of a cook or been interested in culinary until I had children. Now with two young children I enjoy trying out different methods and foods aiming to give them a nutritious diet that even a picky eater will enjoy.
My long term goal is to develop my interest in nutrition and perhaps become a dietician. I had been looking to study at university when Covid struck so was keen to find a culinary course that would be of value towards my future goals. With International Culinary Studio I was able to study the New Zealand Certificate in Cookery Level 4 from home, giving me the flexibility to work around my children and not worry about travel as I live rurally.
I have enjoyed learning a variety of techniques and skills, when and what flavourings to add and my much approved knife skills!
The feedback from my Chef Instructor was very useful and my confidence in the kitchen has greatly increased. “
Valentine’s Day Competition Winner
Thank you to all that entered our 14 Days of Love, Valentines competition. Entrants had to suggest an entrée, main and dessert to woo their valentine and we had some mouth watering options! In the end to make things fair we got the lovely Jo (our finance/ Student Administrator) to do a random draw. Congratulations to our lucky winner, ROBERT NESBIT.

Changes are afoot at International Culinary Studio. From the 6th March we are moving premises – we are not going far though, only two doors down! In this online world, we are moving with the times and will have a flexi work environment. A mix of working from home with an office as a base for meetings and staff catch ups, giving our staff a nicer work/life balance. There will be no changes for our customers, we will be contactable by phone, tawk, and email as always!
